Made this for a lobby day for my patients and everyone seemed to enjoy it. My recommendations are to make sure to drain the excess pineapple juice from the pineapple chunks, use less Mayo, and add slightly more chicken then it calls for otherwise it gets too mushy. Overall good recipe.

Oh yummm, this sounds wonderful and has all the good for you things in it to eat. Can't wait to try it, I'm sure it want last long enough though. My husband probably wouldn't agree, but I would like pecans in it also??? Is that ok? Maybe chopped celery also. Dietitian comment: Since pecans are high in potassium and phosphorus the amount must be limited. If you add 1/4 cup pecans and 2 tablespoons celery potassium is increased to 369 mg and phosphorus is increased to 187 mg per serving.

I use four oven baked chicken breasts, a small can of crushed pineapple in it's own juice, tiny bit of finely chopped onion and celery, chopped pecans and low-fat mayo. Use in sandwiches on low carb whole wheat bread or take to parties as a dip to serve with crackers. Everyone loves it. Served on lettuce leaves would be even better.

I made this for my patients and they loved it. The recipe was really easy to make. I used chicken breast that I cooked in a slow cooker with some onion powder. The pineapple helped keep the chicken really moist without using a lot of mayo.
