This sounds really good. I also think it is high in sodium so I did a little research and found: Pimientos can add a sweet pepper flavor to your dishes quite similar to roasted red bell peppers. Using roasted red peppers may lower the sodium content, pimientos are ground into the common spice paprika. Replacing the pimentos with paprika will also lower sodium content, and there are different flavors of paprika.
