I love this salad. I make it all the time now that I've adjusted a couple of things and re-calculated the numbers. I cut the celery down to 1 cup, eliminated 1 egg, changed the Red onion to 1/2 cup, Red Bell pepper to 1/2 cup, radishes to 3/4 cup diced small, and 1 cup of an English Cucumber, seeds removed. I also added a heaping tablespoon of fresh jalapeno diced very small and cilantro. Everyone in my family loves this which I wasn't sure how it would go over but wal-la!!!

This is great! I cook for my grandparents and they loved it. My hubby who for the most part doesn't give recipes off this site a chance also liked it, I omitted radishes because I don't like them and added a bit of green pepper. First time I added the egg. Second time I made for a thanksgiving side and didn't add the egg. I did add just a bit of cayenne pepper.

Like it a lot. If eggs omitted, how much protein is left? Dietitian comment: approximately 2 grams protein per serving without the 4 eggs.

This is the exact same recipe I used for many years, but used potatoes!! I tried it with rice instead of the potatoes, & Voila!! Delicious!!

I made this salad with rice rather than pasta and it was the hit of the potluck. It got rave reviews and requests for the recipe. I had doubled the recipe, but only used 2 cups of mayonnaise and it worked just fine.
