What is the difference in the nutritional values since I only use macaroni, eggs, and celery?? I guess I will ask a goofy question as well. Why would the values change so much if a cup of mayonnaise is used? if one ate a 1/2 cup would the difference really be that much?? Thank you. Dietitian comment: The main difference is the amount of fat, calories and sodium--all are reduced when you reduce the mayonnaise to 1/2 cup. Sounds good, but how much phosphorus is in a cup of cooked macaroni? Dietitian comment: There is approximately 80 mg phosphorus in 1 cup cooked macaroni.

This has eggs in it and it has mayonnaise in it. I am sure it is delicious but I am not willing to compromise my diet. The eggs is as I was taught, a protein and I can only have six ounces a a day. I guess it is different because I am not yet on dialysis so I have to follow a stricter diet. Who knew??? Moderator Note: For a lower protein diet you can omit the eggs and protein is 2.5 grams per serving.

I thought this recipe was pretty tasty. It was not a lot different than any other macaroni salad, which makes it nice that it can be both "renal friendly" and just like an old favorite.
