Helpful hints

  • Some grocery stores sell diced, cooked turkey. Check the label to be sure it is not salted. You could also purchase fresh, uncooked turkey breast and cook in the oven or grill without adding salt.
  • Wondering how much produce to buy? One medium apple yields 1 cup; three celery ribs yield 1 cup; 1 medium onion or 1/2 large onion yields 1/2 cup.
  • Adjust mayonnaise portion to taste. Reduced-fat mayonnaise may be substituted for regular mayonnaise.

Could I replace the mayonnaise with Tofutti Sour cream or Tofutti Cream cheese. Egg and dairy allergies in family. Dietitian comment: Yes you can substitute either and will have slightly higher protein but lower fat and sodium content. I do not know how much potassium or phosphorus is in the Tofutti products.

I make a salad i call Waldorf Slaw. Adding the cubed turkey to my recipe would make it a complete meal. My recipe calls for angel hair sliced cabbage, diced apples, diced celery & halved pink grapes. i make my dressing with vanilla yogurt, lemon juice (or apple cider vinegar) and either maple syrup or agave (depending on what i have in the cupboard). Would this be an acceptable recipe for a kidney diet? (I am stage 4 non-dialysis maintained on oral meds). Dietitian comment: your recipe sounds great--and ingredients are kidney-friendly. You can see the nutrients and make adjustments in portions or ingredient amounts as needed.
