Helpful hints

  • Fresh Maryland lump crabmeat is best, but other varieties or imitation crab can be used if unavailable.
  • Old Bay Seasoning® is a popular seasoning made from celery seed, salt, mustard, red pepper, black pepper, bay leaves, cloves, allspice ginger, mace, cardamom, cinnamon, and paprika. It contains 160 mg sodium for 1/4 teaspoon. If unavailable, substitute another low-sodium seasoning or spice mix.
  • Look for low-sodium broth containing less than 250 mg sodium per cup. Avoid low-sodium broth that contains potassium chloride—it’s very high in potassium. Reduced-sodium broth containing 500 milligrams sodium or less per 1 cup serving is also a good choice in limited amounts.

I do not endorse the use of nondairy creamers by patients with kidney disease, as these products are usually laden with trans-fats (partially hydrogenated oils). By using nondairy creamers in lieu of dairy products, patients are replacing one bad food choice with another one! Dietitian comment: We are currently revising recipes to remove the nondairy creamers. Milk and several other milk substitutes like nut and rice milk work nicely as a replacement.

Maryland’s Eastern Shore Cream of Crab Soup

This was quite good. One of the best recipes to sub for what your favorites years ago. Don't forget to try this one! I substituted haddock as that was what I had too much of in the refrigerator. Still great.

We live on the the North Coast of California and are blessed with fresh crab. We were prepared to love this soup, but were disappointed with how bland it was. Perhaps more Old Bay Spice is needed? 1/8 teaspoon doesn't seem like enough for a whole pot. And non-dairy creamer is fairly sweet, so perhaps that cuts down on the flavor of the crab. We're going to try it next time with some of our home-made crab stock.

Would the use of original almond milk instead of non dairy creamer be an acceptable substitution for a CKD diet? I use Aldi's brand and for 1 cup it is 60 calories, 140mg sodium, 45mg potassium, 8g carbs, 1g protein, 2.5g fat, and no added phosphates. Thanks! Dietitian comment: Yes this is a good substitution. Many almond milk brands contain a high amount of calcium[INVALID]that's the main concern for kidney patients who have problems with high calcium.
