Made these for dinner. I was a bit skeptical, as I always made them with poblano peppers, and Chihuahua cheese. These were very tasty! Will add to my favorites. I served with cilantro lime rice, and a low phosphorus tortilla.I did omit the mushrooms and sauteed the carrot together with the onion. Really enjoyed this recipe.

This was very good. Next time we will precook carrots because they were too crunchy for our tastes. Also we omitted the egg, flour and oil and baked them instead. Thank you for the wonderful recipes and all the help you provide!
