  • One large cauliflower is approximately 8 cups or 1-1/2 pounds. Frozen cauliflower pieces may be substituted for fresh cauliflower.
  • Vegetables may be steamed instead of boiled if potassium is not restricted in your diet. The potassium content is 440 mg per 1/2 cup serving when cauliflower is steamed compared to 256 mg per 1/2 cup serving when cauliflower is boiled.

Made this tonight. It was really good, a lot lighter than Almost Mashed Potatoes. My husband loves both and is now a big cauliflower fan.

There are 2 type 2 diabetics in this house plus my daughter. I am in stage 2 renal failure, they are not. Their health is well above mine and I would LOVE to keep it that way. Would this benefit them as well? And can this be frozen or stored in fridge for later usage with another meal? (limited time for cooking-sometimes.) Dietitian comment: They can both enjoy this recipe. I'm not sure how the cream sauce will be after freezing and thawing. It will keep in the refrigerator for about 3 days.
