Helpful hints

  • Double the garlic for a stronger garlic flavor.
  • Potatoes are very high in potassium but you can remove part of the potassium by using one of these methods:
    • Double boil method: Peel and small dice potatoes. Place in a large pot of water and bring to a boil. Drain the water and add fresh water to the pot. Bring to a boil, cook for 10 minutes then drain and prepare as desired.
    • Leaching method:  Peel and dice potatoes. Place in a large pot of warm tap water and soak for 2 to 4 hours. Drain and cook as desired.
  • Leached potatoes can be blanched and frozen in batches. To blanch vegetables, add to boiling water for one minute, remove and rinse in cold water before freezing.
  • *Potassium content taken from reference values for double-boiling small peeled and diced potatoes.

Can I make oven baked fries by using the leached potatoes? Do I do the same for sweet potatoes? Dietitian comment: Yes the leaching will remove about half the potassium. Portion control is still important. Leach in warm tap water for 2 or more hours rather than in the refrigerator.

My experience with boiling potatoes is that they tend to fall apart if boiled too long. Wouldn't the double-boil method break the potatoes up, making them difficult to scoop out / use in a recipe? I'm new to this, and I'm stymied. Dietitian comment: The first boil does not cook the potatoes through. After the second boil the potato pieces will be fork tender.

If the only reason for peeling the potatoes is to help the potassium leave the potato, can I peel & boil the skin WITH the potato? I LOVE potato skins but will give them up if necessary. Dietitian comment: If you are on a low potassium diet it's best to remove the skins as this lets more potassium escape into the water. If you are not restricting potassium you can leave the skin on.

I thought I would never be able to have pato again. I tried soaking for 4 hours didn't like the taste. But maybe the double boil will work better.

I cannot find any nondairy creamer that does not have a phosphorus additive. How do I get around this problem? Dietitian comment: Consider using an alternative milk substitute such as unenriched rice milk or almond milk. Check the potassium and phosphorus content in addition to the ingredients.

It is better not to peel the potatoes to keep some fiber in you meals. Moderator comment: If your main goal is to reduce potassium, peeling the potatoes is required to help with potassium removal during the leaching process. If reducing potassium is not a concern you could use unpeeled potatoes.

Do different brands of potatoes have different potassium levels and does pealing the skins affect the potassium levels? Moderator comment: Yes, there are differences in potato varieties. Peeling the skin before cooking in liquid allows more potassium to leach out of the potato and into the liquid.
