Roasted Summer Vegetables

why use large amount of veg. and only 3/4 cup serving?most time they are only good one day or maybe two. Dietitian comment: If you are not limiting potassium you could increase the serving size. Another option is to make only half the recipe. Leftover veggies can be frozen then used in soup or stew or other recipes.
