Ingredients
- 4 celery ribs (medium 8-in)
- 2 tablespoons red bell pepper
- 4 tablespoons hummus
Preparation
- Trim the celery rib ends. Cut the red bell pepper into 1/4-inch square pieces.
- Fill each celery rib with 1 tablespoon of hummus.
- Cut each celery rib into 3 pieces
- Place 2 pieces of red bell pepper on each piece of hummus-filled celery.
Helpful hints
- Mix it up with different flavored hummus blends.
- Place hummus in a plastic bag, snip the corner and pipe onto the celery log.
- Instead of roasted red peppers you can substitute a small jar of diced pimentos if preferred.
