Cucumbers with Sour Cream

Ingredients

  • 2 medium cucumbers
  • 1/8 teaspoon salt
  • 1/2 medium sweet onion
  • 1/4 cup white wine vinegar 
  • 1 tablespoon canola oil
  • 1/8 teaspoon black pepper
  • 1/2 cup reduced-fat sour cream

Preparation

  1. Peel and thinly slice cucumbers and place in a medium-sized serving bowl.
  2. Sprinkle with salt. Allow to sit for 15 minutes then rinse and press out excess moisture.
  3. Thinly slice onion.
  4. Add remaining ingredients to cucumbers and toss.
  5. Chill in the refrigerator before serving.

Helpful hints

  • This is a wonderful addition to any meal, but especially beef and pork dishes.
  • Instead of using 2 common cucumbers, 1 large “English hothouse” seedless cucumber can be substituted.
  • Omit onion if desired—the cucumbers are just as tasty without it.
