I read somewhere online that dialysis pAtients are not supposed to eat oranges or orange juice i think because of potassium. Does that not not apply to mandarins oranges then? Just starting to try looking for my neighbor and a m terrified I will fix something that could hurt her. This is all new territory for me a nd am very nervous. Thanks Dietitian Comment: Yes the diet can be confusing because there is so much to consider. A 1/2 cup serving of mandarin oranges has only 129 mg potassium. Anything below 140 mg is considered low potassium so it's fine to include this ingredient.

Chicken Fruit Salad was made using only 1 1/2 cups of chicken since I only had 2 chicken breasts remaining from chicken soup made the previous day. Great choice if on a restricted protein diet. Was enjoyable. I thought that perhaps 3/4 cup of mayonnaise would not be enough but it was plenty.

Sodium too high for me, if I leave out celery would it help the sodium content, and what could I use in place of celery that would be low in sodium? Dietitian comment: Actually the mayonnaise contributes the most sodium in this recipe. You could substitute a low sodium mayonnaise or use an oil and vinegar base or low sodium dressing instead.

Great dish, loved it.If you added onions or other veggies broccoli would that be bad for diaylsis patient ? Dietitian comment: You could add 1/4 cup onions and 1/2 cup chopped broccoli florets. Potassium increases by 25 mg per serving. You could reduce the portion size if lower potassium is needed.

I like this recipe very much but it has been awhile since I have made it. The recipe calls for 2 cups of pasta. Is that cooked or uncooked Moderator comment: Use uncooked pasta for this recipe and cook according to instructions but omit the salt.

Well...what a wonderful recipe, used it for a dish at a school reunion of school mom vounteers, 2 of which are dialysis patients (this includes me) and what a hit!! I add curry powder (1 tbsp) sometimes for a change of taste. Great over a bowl of lettuce for those who like volume, will be made again and again, and yes great for a summer time meal. Enjoy :>)

This is delicios! I added just about 1/2 cup chopped red onion & a little surry powder the 2nd time I made it & it was even better! I made it for some friends who came over for lunch & they loved it, too. Perfect dish for a hot summer day!

Made the chicken salad this week; it was very tasty. It makes a LOT and when I make it again I'll probably cut the recipe in half since it's just my husband and me eating. (Kathy)
