Portions: 4     Serving size: 1/2 cup

Ingredients

  • 1 cup  cabbage
  • 1/4 cup carrots
  • 2 tablespoons green bell peppers
  • 1/4 cup onion
  • 1/4 cup mayonnaise
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon dill weed
  • 1/2 teaspoon celery seed 

Preparation

    1. Combine all vegetables together.
    2. In small bowl blend mayonnaise, vinegar, sugar and seasonings and pour over vegetables and mix.

Would it be alright to substitute lemon juice for the vinegar? Dietitian comment: Yes, this substitution will not have a significant impact on the nutrients of concern for a kidney diet.

In following the above recipe for coleslaw can I use store bought pkged coleslaw and add the seasonings,skip the dressing and add 1/4 cup canned crushed pineapple & 1/8 cup dried cranberries? Dietitian comment: Yes the prepackaged coleslaw is slightly lower in potassium than the combined vegetables in this recipe. The pineapple and cranberries are kidney-friendly and sound like a tasty addition!

This is a GREAT place to get any kidney-friendly food and drink recipe. I wish that EVERY cookbook had the COMPLETE nutrient breakdown for each recipe. Also, every box or bag of food should have a COMPLETE nutrient breakdown.
