Sounds delicious. Would fresh strawberries be alright rather than the cranberries? Dietitian comment: Yes that sounds like a tasty change. Recipe will be slightly higher in potassium. I have made this recipe 4 times. It is so good. I do put a squirt of lemon juice instead of the fruit protector and it enhanced the flavor. This gets better the longer it's in the fridge.

Made this for my husband and our 10 year old grandson tried it. They both loved it. As a matter of fact, the exact words from our grandson was, those kidney people sure know how to cook. Lol...

Few observations, am new: •Sugar & marshmallows in diabetic meal? •What's in the fruit protector? Why load kidneys with chemicals to expel? Isn't there a natural alternative? Few drops of lemon in a little water, mist sprayed? Else, make smaller, fresh batch for immediate serving? •Wld appreciate comments. Dietitian comment: Since the total carbohydrate content is only 16 grams, a serving from this recipe with the sugar and marshmallows can easily be included in a diabetic meal. The fruit protector is ascorbic acid and citric acid. You can use citrus juice such as lemon or lime instead.

Cranberry-Apple Salad

This salad my husband liked very much. I am glad I found this website. I don't have to worry what to prepare for a pre- dialysis patient. Thanks!
