Creamy Cucumber Salad

Enjoy the chilliness of this Creamy Cucumber Salad on a hot summer day. You can eat this kidney-friendly salad as is, or add onion and cilantro to bring in more flavors.

Portions: 2     Serving size: 1/2 cup

Ingredients

  • 1 medium cucumber
  • 1/3 cup sour cream
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh dill weed 

Preparation

  1. Thinly slice cucumber.
  2. Mix together sour cream, vinegar (or lemon juice), sugar (or sweetener) and pepper.
  3. Combine mixture with cucumbers. Chill before serving.
  4. Garnish with fresh chopped dill weed if desired.

Helpful hints

  • Replace vinegar with lemon juice if preferred.
  • For a variation add 2 tablespoons chopped onion or chives.
  • For a lighter version, substitute fat-free sour cream instead of regular sour cream.

can I use salad dressing or mayo in place of sour cream?? Dietitian comment: You can but be aware the fat and sodium content is higher with this change.

This was fantastic. I loved it. My wife added a little more dill and used lemon. I put it on top of my lettuce.

I make this for my father-in-law using the lemon juice, light sour cream, and sugar substitute. It's quick, easy, and he loves it!

I have a different creamy cucumber salad option. It must have come from Mrs. Dash. 1 lg cucumber thinly sliced 2 tsp Mrs. Dash Garlic/Herb 1 tsp Mrs. Dash lemon/pepper 1 1/2 Tbs vinegar 1 1/2 tsp sugar 1/2 cup sour cream 1/2 cup chopped onion Mix together and chill 1-2 hours before serving. I make this and use 3 tbs. on top of lettuce replacing salad dressing.
