Sausage: Your local butcher or grocery store's meat department may be able to make homestyle sausage as you request.....without salt and with whatever seasonings you want.

What kind of sausage can I add to this? Dietitian comment: If you want to keep it kidney-friendly try one of the sausage recipes from DaVita. Turkey Sausage and Mexican Chorizo Sausage would work well. If you buy a prepared sausage compare brands/types and look for the lowest sodium sausage without phosphate additives.

I did make a few tweeks based on reviews that this was sorta bland...Paul Prudhomme, the famous chef from NOLA has a line of spices, and he has a Cajun MAJIC that is sodium free, also, no added potassium chloride either...It comes in a blue can...It cost me $4.95 here in Texas...First I cut the recipe in HALF ( I don't need 3 quarts of Jambalaya to eat....honestly people!) and my recipe STILL filled the 9x13 pan...I added one stalk of celery, a tablespoon of the majic' and a few shakes of cayenne pepper as well as 3 or 4 shakes of Tabasco...I also used 8 ounces of shrimp and 8 ounces of chopped white meat chicken. I'm sure these changes may have brought the sodium and potassium up a tick or two...but the flavor was wonderful...and the RICE turned out perfect, which I always have a problem with it being underdone and crunchy or overdone and sticky in dishes like this. THIS one is a keeper..STILL had 5 servings to freeze...well, 4...I had it for lunch the next day too!

Great recipe! I printed the recipe and came home from work and my husband had it in the oven. He said it was very easy to prepare. We loved the blend of flavors and the fact that it had shrimp for a little variety. Next time my husband said he may add a little tabasco for a little heat just because he likes things spicy. We will definitely be making again. It makes a lot so we cut it in half and had plenty for two meals.

I thought this recipe was good but a little on the bland side. I would also suggest either more broth, or something liquidy. It was kinda dry

This is my first time making jambalaya. The only thing I did different was added hot sauce to taste after making it. This recipe rocks and makes a ton of food!

Let me tell you, my husband and I have eaten zatarains for years, and had to stop due to the sodium and potassium. This recipe was easy and SO GOOD! It was as good, if not better than zatarans. Thank you for this one, I hope to find somemore recipes that are just as good!
