Maryland Lump Crab Cakes

This recipe is kidney-friendly and definitely a treasure from the sea that tastes great on your plate. Treat your taste buds to Joann’s Maryland Lump Crab Cakes. They’re sure to please friends and family, too.

Portions: 6     Serving size: 1 crab cake

Ingredients

  • 1 pound lump crab meat
  • 1 slice white bread
  • 1 tablespoon mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon Old Bay® seasoning, 30% less sodium
  • 1 tablespoon fresh parsley
  • 1/8 teaspoon cayenne pepper
  • 1 large egg
  • 2 tablespoons olive oil

Preparation

  1. In medium bowl, pick through crab meat and remove any shell pieces.
  2. Cut bread slice into cubes.
  3. Add bread, mayonnaise, mustard, Old Bay®, chopped parsley, cayenne pepper and egg to the crab. Mix lightly until all ingredients are mixed together, but do not over mix.
  4. Use a 1/3 cup measure to portion out 6 crab cakes, each 3/4" thick. Refrigerate for one hour.
  5. In a heavy skillet (preferably a cast iron skillet) heat olive oil or cooking spray.
  6. Fry crab cakes until browned on both sides turning only once (about 5 minutes on each side).

Helpful hints

    • Paprika can be used instead of Old Bay® seasoning. Sodium is reduced to 274 mg per serving.
    • 1/2-cup crushed saltines, unsalted tops, can replace the bread.
    • For an attractive presentation serve on a bed or chopped lettuce garnished with mandarin orange slices.

I used this as the basis for my Salmon Cakes rather than crab. So far, so good. Added chopped onion and plenty of cayenne. Will sprinkle with paprika after cooking.

I'm puzzled at the difference in protein content of this recipe compared to your other crabcake recipe. They both use 1# of crab and 1 egg. Moderator comment: Great question! I compared the analysis and the only difference is the type of crab meat. Crab cakes has 1 pound of snow crab meat and Maryland Lump Crab Cakes has 1 pound of lump backfin crab meat. Nine different types of crab meat in the database range from 4.15 to 6.72 grams of protein per ounce.
