Blender Salsa

Ingredients

  • 1/2 small onion
  • 1 clove garlic
  • 14 ounce can diced tomatoes
  • 10 ounce can no-sodium added Ro-tel® tomatoes
  • 1 jalapeno
  • 1 teaspoon honey
  • 1/4 teaspoon ground cumin
  • 1 tablespoon fresh cilantro
  • Juice of 1 lime

 

Preparation

  1. Roughly chop the onion. Peel and smash the garlic.
  2. Combine all ingredients in a blender (can also use a food processor) and pulse for 30 seconds or until desired salsa consistency is reached.  Serve with tortilla chips or your favorite Latin American dish!

Helpful hints

  • Can adjust herbs and spices to taste. The seeds can be removed from the jalapeno to reduce the amount of spice.
  • Recipe can stay up to one week in the refrigerator.
