High Protein Rice Krispy Treats

Ingredients

  • 7 tablespoons butter
  • 40 large marshmallows
  • 1-1/2 cups whey protein powder 
  • 6 cups rice crispy cereal

Preparation

  1. Melt butter in a large pot and add marshmallows. Stir constantly until marshmallows are completely melted.
  2. Remove pot from heat and gradually add protein powder. Mix until smooth. Add rice crispy cereal and mix until coated.
  3. Pour onto a greased 13” x 9” x 2” baking pan or cookie sheet and press down.
  4.  Cool and cut into 12 bars, 3” x 4” each.

Microwave preparation

  1. In a large glass mixing bowl microwave butter and marshmallows for 2 minutes on high power. Stir to combine ingredients. Microwave 1-1/2 to 2 minutes longer.
  2. Add protein powder and stir until smooth. Add rice crispy cereal and stir until well coated.
  3. Pour onto a greased 13” x 9” x 2” baking pan or cookie sheet and press down.
  4.  Cool and cut into 12 bars, 3” x 4” each.

Helpful hints

  • For CKD non-dialysis on a lower protein diet, omit the protein for a low-protein snack.
  • After protein powder is added, mix rice crispy cereal in as soon as possible because the protein powder will start to harden if allowed to cool.
  • Use the amount of protein powder equal to 160 grams protein. Protein powders vary in the amount of protein per serving. The chart below lists some popular lower phosphorus powders and the amount to use in this recipe. Ask your dietitian for help if you use a different brand of protein powder.
