Ingredients

  • 1 cup white rice, uncooked
  • 1/4 cup canola oil
  • 1/4 cup onion
  • 1 clove garlic
  • 1/4 cup low-sodium tomato sauce
  • 3 cups water
  • 1/4 teaspoon salt (optional)

Preparation

  1. Chop onion and garlic.
  2. In a skillet, heat oil over medium-high heat. Add rice and cook until browned, stirring frequently.
  3. Add onion and garlic; sauté until tender.
  4. Add tomato sauce, water and salt.
  5. Cover and simmer about 20 minutes until water is absorbed.

Helpful hints

  • Omit salt if regular tomato sauce is used instead of low sodium. The sodium content is about the same.
  • For best results, resist lifting lid from skillet when cooking rice.
