Lemony Cheesecake Bites

Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup regular oatmeal
  • 8 ounces cream cheese
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • zest of half a lemon
  • 2 tablespoons lemon juice

Preparation

  1. Add coconut flour and oats to a food processor. Process into a fine powder, about 1 minute.
  2. Add remaining ingredients, and process until smooth, about 1 minute.
  3. Using a small cookie scoop or approximately a tablespoon, form about 20-25 balls.
  4. Place formed balls on parchment paper on a cookie sheet.
  5. Refrigerate 2 hours to firm up. Store in an airtight container in the refrigerator.

Helpful hints

  • Play around with flavors. Almond extract or orange extract works nicely too.
