Ingredients

  • 8 ounces cream cheese
  • 2 eggs
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • 2 dozen paper cupcake liners
  • 2 dozen vanilla wafers
  • 1-1/2 cups apple pie filling

Preparation

  1. Set out cream cheese to soften for 1 hour before making tarts.
  2. Preheat oven to 350° F.
  3. Blend cream cheese, eggs, sugar and vanilla extract in a bowl and beat until smooth.
  4. Place cupcake liners in muffin pan. Put one vanilla wafer into each cupcake liner.
  5. Pour cream cheese mixture over vanilla wafer, about 3/4 full.
  6. Bake for 10 minutes. Remove tarts from oven and cool in the refrigerator.
  7. Immediately before serving top each tart with 1-1/2 tablespoons of fruit pie filling per tart.

  • Suggested fruit pie fillings include cherry, blueberry, apple or strawberry.
