Almost Mashed Potatoes

Trying to fit foods you love into the dialysis diet can be a challenge. DaVita renal dietitian, Amity in Florida, works with her patients to find foods low in phosphorus, potassium and sodium. Here is a favorite that has been modified for the renal diet — Almost Mashed Potatoes. Enjoy this great taste and still maintain your kidney-friendly diet.

Portions: 6     Serving size: 1/2 cup

Ingredients

  • 6 cups cauliflower 
  • 4 ounces cream cheese
  • 1 teaspoon garlic
  • 1/2 teaspoon black pepper 

Preparation

  1. Cut cauliflower into pieces and rinse with water.
  2. Place cauliflower pieces in a microwave safe dish, cover and cook on high for 8 to 10 minutes or until soft.
  3. Drain off moisture from cooked cauliflower.
  4. Carefully place hot cauliflower in a blender and blend until smooth.
  5. Add cream cheese, garlic, and pepper. Blend to combine ingredients.
  6. Remove from blender and serve hot.

Renal and renal diabetic food choices

  • 1 vegetable, medium potassium
  • 1-1/2 fat

Carbohydrate choices

Helpful hints

  • One medium head cauliflower yields 6 cups.
  • Garlic powder may be substituted for the minced garlic.
  • Since cauliflower is bland like potatoes, this recipe tastes similar to mashed potatoes. The potassium content is 100 mg lower per serving.
  • To reduce fat content, use light cream cheese. Protein, sodium, potassium and phosphorus content will be slightly higher.

Anything to substitute for cream cheese...non dairy? Dietitian comment: Try any of the recommended milk substitutes such as rice milk, nondairy creamer or almond milk. Add only a small amount to avoid making it too watery. You can also add a little margarine or butter if desired (or a nondairy butter substitute).

The cauliflower is a medium potassium vege or high? Dietitian comment: Medium. A 1/2 cup serving of boiled cauliflower contains 172 mg potassium. If raw, the same amount contains 152 mg potassium.

Made this when my dad was visiting. New staple for my hubby and I. We loved it! Great option to potatoes. I out Saran Wrap over glass bowl with small pieces of cauliflower. Cream cheese makes it. Use nothing but that and pepper. We salted ours a bit individually. Yum!!!

Wow, these are really good. I'm surprised but they actually are a very good substitute for mashed potatoes. My blender didn't do a very good job of puree-ing them so I had to keep opening the blender and stirring. Might try the food processor next time.

I am a HUGE potato lover and I love homemade mashed potatoes. I've found that leeching can be a pain at times, so I thought I'd try this recipe. I made them and had a few people over. Everyone really liked them. Even my husband who is not a big fan of most veggies, including Cauliflower liked these! My motto is: "Anything with cream cheese is worth trying." I will make these again! I added salt, sparingly, and lots of black pepper to mine. Fresh Garlic is the way to go!

can he eat instent mash potatoes? instead of soaking real ones? thank you Moderator Response: Instant mashed potatoes are lower in potassium than fresh potatoes. After leaching, the fresh potatoes are around 40 mg lower in potassium than the instant potatoes, so yes, you could substitute and still be in an acceptable range. You could also use nondairy creamer instead of milk when making the instant potatoes. Some brands of instant potatoes contain extra sodium. Look for the lowest sodium brands.
