Cucumbers with Sour Cream
- CKD non-dialysis
- 2 medium cucumbers
- 1/8 teaspoon salt
- 1/2 medium sweet onion
- 1/4 cup white wine vinegar
- 1 tablespoon canola oil
- 1/8 teaspoon black pepper
- 1/2 cup reduced-fat sour cream
Peel and thinly slice cucumbers and place in a medium-sized serving bowl.
Sprinkle with salt. Allow to sit for 15 minutes then rinse and press out excess moisture.
Thinly slice onion.
Add remaining ingredients to cucumbers and toss.
Chill in the refrigerator before serving.
