Grilled Multicolored Peppers and Onions

This colorful combination of bell peppers and onions can be grilled together and served with a grilled protein source of your choice. Flavorful, colorful and recommended on the dialysis diet, this kidney-friendly recipe for Grilled Multicolored Peppers and Onions is a great addition to a cookout.

Portions: 4     Serving size: 1 skewer

Ingredients

  • 1 medium red onion
  • 1 medium Vidalia onion
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/3 cup olive oil
  • 1/4 teaspoon salt 
  • 3/4 teaspoon black pepper

Preparation

  1. Quarter-cut both onions.Seed bell peppers and cut into 8 pieces.
  2. Prepare a covered grill for direct grilling. 
  3. In a large bowl, combine all ingredients, tossing well so that vegetables are evenly coated with oil. 
  4. Place vegetables in a grill basket, or arrange on metal skewers. Grill about 18 minutes, turning often so vegetables brown evenly on all sides.

potassium is high Moderator comment: The recipe suggests to count as 2 vegetable servings. You could also make 8 skewers instead of 4 for a smaller serving with 122 mg potassium each.

The recipe looks good, but i didn't get chance to test it as yet. I shall forward it to my friends and relatives to try it themselves. But what is substitute for bell peppers? Moderator comment: You can substitute other types of sweet peppers or summer squash or mushrooms for the bell pepper. Yu may need to adjust the cooking time.
