This is one of my favorite things to cook in the summer, but I put mine in a grill basket because I am lazy. Yum!

potassium is high Moderator comment: The recipe suggests to count as 2 vegetable servings. You could also make 8 skewers instead of 4 for a smaller serving with 122 mg potassium each.

The recipe looks good, but i didn't get chance to test it as yet. I shall forward it to my friends and relatives to try it themselves. But what is substitute for bell peppers? Moderator comment: You can substitute other types of sweet peppers or summer squash or mushrooms for the bell pepper. Yu may need to adjust the cooking time.
