Turkey Waldorf Salad

Recipe submitted by DaVita dietitian Denise from Virginia.
This version of the world-famous Waldorf Salad keeps the same satisfying apple-and-celery crunch, but boasts two innovations — turkey takes the place of chicken, and the dressing is sweetened with apple juice. These embellishments are thanks to DaVita renal dietitian, Denise from Virginia, who enjoys creating recipes for her dialysis patients. She calls this one Turkey Waldorf Salad.

Serving size: 1/2 cup
Ingredients
- 12 ounces unsalted turkey breast, cubed
- 3 cups red apple, diced
- 1 cup celery, diced
- 1/2 cup onion, chopped
- 1 cup mayonnaise
- 2 tablespoons apple juice
Preparation
- In a medium bowl combine turkey, apple, celery and onion.
- Add mayonnaise and apple juice. Stir together until well mixed.
- Chill until ready to serve.

Helpful Hints
- Some grocery stores sell diced, cooked turkey. Check the label to be sure it is not salted. You could also purchase fresh, uncooked turkey breast and cook in the oven or grill without adding salt.
- Wondering how much produce to buy? One medium apple yields 1 cup; three celery ribs yield 1 cup; 1 medium onion or 1/2 large onion yields 1/2 cup.
- If reduced-fat mayonnaise is substituted, nutrients change to: calories 274, fat 15 g and sodium 348 mg.
