Chicken Apple Crunch Salad

Recipe modified from Diabetic Cooking and submitted by DaVita renal dietitian Theresa from Colorado.

Portions:  4

Serving size:  3/4 cup

Ingredients

  • 2 cups cooked chicken, cubed
  • 1 cup gala apple, diced
  • 1/2 cup celery, diced
  • 2 tablespoons scallions, chopped
  • 1/4 cup dark raisins
  • 1/3 cup low-fat mayonnaise
  • 1 tablespoon low-fat sour cream
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground black pepper

Preparation

  1. Combine chicken, apple, celery, scallions and raisins in a large salad bowl.
  2. Whisk together mayonnaise, sour cream, lemon juice, cinnamon and black pepper. Pour over the chicken-apple mixture and toss.
  3. Refrigerate to chill prior to serving.

Helpful Hints

  • The raisins can be eliminated to reduce potassium content to 270 mg per serving.
