Southwest Tuna Salad

Serving size: 1/2 cup
Ingredients
- 1/2 cup mayonnaise (regular or reduced fat, as desired)
- 2 fresh jalapeño peppers, seeded and finely chopped
- juice of 1/2 fresh lime (or 2 teaspoons lime juice)
- one 6-ounce can water-packed tuna, drained well and flaked
- 1 cup cucumber, seeded and cubed
- 2 green onions, chopped
Preparation
- In medium bowl, combine mayonnaise, jalapeño pepper and lime juice.
- Stir in drained tuna. Mix well.
- Add cucumber and green onions. Chill until ready to eat.
- Serve a scoop of Southwest Tuna Salad on lettuce or on a bagel or bread of choice. Garnish with chopped cilantro if desired.

- Make ahead and chill so flavors blend. You can substitute chicken for tuna, it’s just as yummy.
