Ingredients
- 1 cup bell pepper
- 1/2 cup onion
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/3 cup all-purpose flour
- 1/4 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 cup reduced-sodium chicken broth
- 1 cup 1% low-fat milk
- 3 cups cooked white rice
- 2 cups cubed chicken, cooked
- 1 cup sliced fresh mushrooms
- 1 tablespoon Mrs. Dash® herb seasoning blend
Preparation
- Heat oven to 350° F. Spray a 1-1/2-quart baking dish with nonstick cooking spray.
- Chop bell pepper and onion.
- In a large saucepan, heat olive oil and butter over low heat.
- After butter is melted, stir in flour and black pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat.
- Stir in Worcestershire sauce, broth and milk. Heat to a boil, stirring constantly. Boil and stir for one minute.
- Stir in cooked rice, chicken, mushrooms, bell pepper, onion and Mrs. Dash herb seasoning.
- Pour into baking dish. Cover and bake for 30 minutes. Remove cover and continue cooking for 20 minutes.
Helpful hints
- Portion leftovers and freeze to reheat later for a quick meal.
- For variation, substitute 2 cups frozen mixed vegetables for bell peppers and mushrooms.
- Reduce or increase the amount of poultry for a lower or higher protein meal.
- Substitute turkey for chicken if desired.

I have read this recipe several times. I can't find where in peoples comments they use non-dairy creamer. The recipe calls only for 1% am I right? Dietitian comment: Several years ago we modified many recipes to remove nondairy creamer due to phosphate additives. Now there are some products available without the phosphate additives.

Chicken/Rice for one..do you have a recipe for just one or two.? I have been looking a new recipe. Dietitian comment: This recipe could easily be cut in half to make 3 portions. You can refrigerate or freeze the 2 leftover portions for a quick meal later. Checkout the DAVita cookbook library and download "Cooking for One or Two" for a collection of 14 recipes. VERY BLAND. Husband and I discussed what woukd make this recipe better. 1. use two cups of rice; 2. add mixed vegetable (thawed from frozen); 3. french’s fried onions; 4. panko bread crumbs on top; 5. 1/4 diced onion; 6. 1/2 red bell pepper; 7. instead of white rice use rice or egg noodles

can i use rice milk instead of 2% ? thanks, Kathy Dietitian comment: Yes the rice milk should work in this recipe. The potassium and phosphorus will be lower.

I have a problem with the portion size. Anyone who can cook can make it taste great. Personally, I like the flavor to explode in my mouth with every bite. The portion size must be for someone who weighs about 70 pounds. Us normal size people would starve to death before our kidneys ever gave out. Dietitian comment: Definitely adjust the portion based on your calorie and protein needs. You can always add extra rice or more or less chicken to this recipe based on your needs.

Wow. If this is what a kidney diet is like shoot me now please. Disgusting. Actually I shouldn't say disgusting. Because that implies there was flavor to it. This fish had zero flavor. We took about two bites, through it I. The garbage and ordered pizza lol. Kidneys be damned!

I wish you guys gave allergen options, we can not do wheat nor tomato. Having to adjust recipes is fine but it would be nice to be able to have an option that filters out recipes with ingredients we can not have. I find meal prep so stressful. Is Worcestershire gluten free? Dietitian comment: Usually not. It may contain malt vinegar or other ingredients that contain gluten.

I made this and followed the receipt exactly. Husband said it was tasteless (just can't get used to not having salt etc). Dietitian comment: You can try increasing the salt-free seasoning or add additional reduced sodium Worcestershire sauce at the table.

Recipe was, indeed, a bit bland, as others have mentioned. I also jazzed it up with some extra Mrs. Dash and garlic powder. I also sauted the veggies first. PLEASE, PLEASE.....who manufactures this yellow baking dish and where did you purchase?? Carolyn Dietitian comment: Thanks for the tips Carolyn. The casserole dish was owned by one of our food stylists who has since retired. I am unable to find where she purchased it.

Made this to night for me and a few coworkers they loved it they add there own salt the only thang i did was leave out the mushrooms next time i make it iam adding red peppers and more miss dash for more flavoring

Not sure I would make this again. As others have said, As others have commented, it was very bland. If I decide to make it again, I would definitely saute the vegetables first and add some garlic and more spices.

What a waste of time & money. This recipe is horrible. First one I made for my husband from Davita recipes. Needs a low potassium diet. Bland, bland, bland. If your going to put recipes out there for your patients and others to use, please test them out and then ask yourself - is it good, is it seasoned well, would I make it again? Unsure I want to try another recipe.

One question. This recepie, the same as others, say that one portion is 1 cup. Could you suggest what else I could eat with them? I hope 1 cup is not all I can eat as a meal. Dietitian comment: you can add a dessert or some fruit, a dinner roll or your favorite bread with olive oil spread or butter. If you need additional calories you can get some ideals from the article "Calories: A Guide to Adding or Limiting Them" on the DaVita.com website. The other option is to increase the serving size--depending on how it fits into your goals for protein, sodium, potassium or phosphorus.

I wish I'd read through the comments before making this. Two stars for being low potassium and low sodium. But it has almost no flavor whatsoever. This was a swing and a miss. I might try it again and with some of the readers' suggestions, but not the original recipe. Completely bland.

OK making this now my changes. Cooked rice and wild rice in chicken stock, cooked the mushrooms and onions in a little OV then added a cup of chicken stock to pan along with diced carrots, celery and turnip, added some tarragon and Worcestershire sauce. Cooked until veggies where a tad softer tossed in chicken red pepper and rice milk into a casserole dish and mixed well baked in oven. Not sure how it tastes yet but by doing a taste test to the mushroom base items it should be good here's hoping

After reading the comments, I jazzed it up a bit. It was delicious. I seasoned with minced fresh garlic, garlic powder, fresh lemon juice, parsley, and Braggs Amino. Braggs Amino is a Kaiser recommended salt substitute; I've used it for the past 9 years, its great. The entire family loved the dish.

I agree with some of the other comments. It tastes kinda bland. I even cooked the chicken in onion and garlic. However, it's the sauce that's missing flavor. Hopefully this recipe can be improved somehow, but I just don't know what exactly.

This is an awesome casserole. Try replacing the 1% milk with almond milk. Almond milk has no potassium and only 18.4 mg of phosphorus per cup. Also, try Unsalted chicken broth by Swanson.

After a little experimentation I found that for me, at least, this recipe tastes much better when I substitute some steamed mixed vegetables for the onion, bell pepper, and mushrooms. Somehow, the mixed veggies harmonize much better with the chicken and other ingredients. I use 1 to 1 1/2 cups of Birds Eye mixed vegetables (peas, carrots, corn) that come in the steam package.

I am going to try this recipe...Just wanted to let anyone know if they are having a hard time finding non-dairy creamer to look in the frozen food cases. This is where I found it. Only given a 1 star rating until after I try this. Dietitian comment: We have replaced the nondairy creamer with low fat milk recently because of the phosphate additives in most ndc products now. Additional recipes are being updated to make this change.

If you add 1 tsp of taragon - you'll find it really makes this into a gourmet meal. Fortunately for me I am a casserole lover and try all new ways to heighten the taste of everything I cook.

presume 17g proten per meal is too much(my targetin total less than 15g) thence better to replace by low protein raice rathar than normal rice.

sort of new to this , was just wondering, when a recipe on DaVita calls for butter, do you mean real butter or margarine, trying so hard to do things right , please help me , it's so very appreciated sense im a little slow and have a hard time learning, I was so glad when I found DaVita...Thank You ! And just one more thing , do i par-boil the rice a minute then cook in fresh water like potatoes ? T.Y. again. Dietitian comment: Some recipes call for butter and others for margarine (trans fat-free recommended). If you are following a low saturated fat diet you can substitute trans fat-free margarine for butter in any recipe. For the rice, cook it according to the package instructions but omit added salt. The usual method is to bring to a boil and cook on low for about 20 minutes.

Fearing this would be bland as other reviewers have said did add a teaspoon of dried sage. I also boiled my chicken thin sliced boneless breasts in unsalted vegetable broth and placed them in the bottom of a 9x13 casserole dish(leaving them intact helps me make sure I get a full serving of protein). While making the sauce, I added the Mrs. Dash and the dried sage to make sure it was distributed evenly throughout the entire dish. For the veggies, I used Birdseye Recipe Ready Chopped Seasoning Blend(red & green bell pepper, onions and celery) The entree came out delish. Sorry I didn't rate the recipe as written but why waste ingredients and other reviewers comments and not LEARN from them.

Great recipe as is. I like experimenting with recipes and here's my take on this one. I used 1 cup of wild rice cooked for 45 min., increased the chicken to 3 cups, mixed veggies, mushrooms, red bell peppers, celery, onion, garlic, Mrs. Dash seasoning, no sodium chicken broth and original rice milk. Baked for 40-45 min. Very tasty and nice presentation with the wild rice.

This sounds very good, In your recipes I assume you use no-salt butter and are you using low sodium Worcestershire sauce? Can I use heavy whipping cream, by the TBL? it is low in salt and potass. Gives rice milk a little richer flavor. 4 stars Thank you. Penny Dietitian comment: No the recipe analysis uses regular butter and Worcestershire sauce unless specified as unsalted of low-sodium. However you can use the salt-free products for a lower sodium dish. Yes, if you use 1-1/4 cups rice milk with 1/4 cup heavy cream instead of nondairy creamer the nutrient profile is even better[INVALID]lower in carbs, fat, sodium, potassium and phosphorus.

I am having a hard time finding non-dairy creamer that is not flavored. Look for the liquid creamer in the dairy section. You can also substitute non-enriched rice milk for the nondairy creamer as suggested in another review.

Looks very good and I miss making casseroles....can I use evaporated milk? Don't like non dairy stuff. What does that do to the numbers? Thanks. Dietitian comment: The evaporated milk is much higher in potassium and phosphorus so I do not recommend it. Try rice milk or almond milk. Check labels and ingredient lists and look for products without added phosphates or high potassium content.

This recipe sounds good and I would like to make it but I question all the additives in non-dairy creamer, particularly the phosphates. Dietitian comment: Yes, phosphate additives are taking over our food supply! If you feel like experimenting you could use almond milk or rice milk instead. I would also add 1-2 tablespoons of oil to replace some of the fat from the nondairy creamer. (Check brands and varieties of almond and rice milk and select a brand without added calcium-phosphates.)

I found only flavored liquid non-dairy creamer in the store. Can I use dry with water - if so, what would the proportions be? Dietitian comment: I suggest asking the store manager if they carry the unflavored non-dairy creamer. Since I have noit tried any of the recipes with dry ndc I am unsure if the recipe would work[INVALID]but you could give it a try.

We love this casserole! I make it all of the time. I do add frozen colored bell peppers and the holy trinity...celery, onions and green bell peppers. I even make it for church suppers. Excellent dish!!!!!

I have not made this yet but am looking for new recipes to make my husband. I can add flavoring (that isn't a problem) but need to know if the non-dairy creamer is liquid or powder? Moderator: The nondairy creamer is liquid in all the recipes unless otherwise stated.

Chicken and Rice was good but i changed it up instead of using the veggies they recommended i used some frozen mixed veggies and it turned out great.
