This was DELICIOUS! I made this with substitutions: Bob's Red Mill Gluten-Free All Purpose Flour Silk AlmondMilk Unsweetened Vanilla Oh, my goodness! This was good! Plus, I think this is a very versatile recipe. I can totally see me tinkering with this to make it almost a makeshift pizza (by adding a few diced tomatoes, tomato sauce, bacon crumbles, black olives, some red onion, etc). Now, I am not a cook, at all, but I can see this in other ways, even if I have to experiment before getting it just right. I have gluten and dairy issues, but I really loved this breakfast as I made it this morning! Topped with agave nectar and some pineapple chunks!

Dietitian comment: There's not a significant change in potassium, phosphorus and sodium if you add 1 tsp vanilla and 1-2 tablespoons brown sugar. You can use the Planner & Tracker feature in DaVita Diet Helper to calculate the nutrient difference. To do this, delete the current DaVita Suggested breakfast. Add this recipe and the other ingredients by using the Add Item feature.

What can I use to substitute for milk and flour? Rice milk with 2% & rice flour with wheat flour?Dietitian comment:You could make those substitutions or you could try the DaVita recipe for Super Simple Baked Pancake.
