Helpful hints

  • If you are on a lower carbohydrate meal plan select bread or roll with lower carbohydrate count or change the portion to 1/2 sandwich.
  • Italian, Portuguese and ciabatta rolls tend to be longer and more rectangular in shape and will hold the roasted red pepper shape nicely. Any rectangular sandwich roll is fine to use. Compare and choose the lower sodium brand.
  • The peppers can be roasted a day in advance, stem & seeds removed. This makes for an even easier and quicker assembly of the sandwiches the next day.
  • Daiya® nondairy cheeses are relatively low in phosphorus and potassium. There are other flavors of this vegan cheese available. Check your local grocery store.
  • If desired, fresh mozzarella cheese can be used for those who include dairy.
  • This recipe can be made on a gas stove or an outdoor grill, DO NOT attempt this on an electric or induction stovetop. These types of stovetops will not roast the peppers.

I tried this yesterday very good! I bought some vegan cheese but opted to use a little shredded mozzarella instead. I used a white pita style bread also to cut down on the nutrient level. Are the high values in this recipe mostly from the bread? Can you provide the potassium and phosphorus levels for the vegan cheese please? Thank you. Dietitian comment: One ounce of the Daiya vegan cheese substitute has 11 mg potassium and 13 mg phosphorus.

This sounded good even though I am not vegan. I found several choices for the Daiya cheese but noticed that it had a Phosphate additive (Tricalcium Phosphate I thinK) so I opted for a different brand. Have not tried it yet.

I seen on a cooking show that you can roast bell peppers in the oven using the broiler. I wonder if you bought the red peppers in the jar would work. Dietitian comment: Yes you can substitute the bottled red peppers. Check the sodium content as some brands have lots of salt added bot others are low in sodium.

Isn't that a lot of sodium, phosphorus and potassium? Dietitian comment: If you consider this is almost a complete meal it works into most renal meal plans. If you want a loser sodium sandwich try using flatbread for a wrap instead of the roll.
