Rotisserie Chicken Noodle Soup

Ingredients

  • 1 prepared rotisserie chicken
  • 8 cups low-sodium chicken broth
  • 1/2 cup onion
  • 1 cup celery
  • 1 cup carrots
  • 6 ounces wide noodles, uncooked
  • 3 tablespoons fresh parsley

Preparation

  1. Remove chicken from bones and chop into bite-sized pieces. Measure 4 cups for the soup.
  2. Pour chicken broth in a large stock pot; bring to a boil.
  3. Chop onion; slice celery and carrots.
  4. Add chicken, vegetables and noodles to stock pot.
  5. Bring to a boil and cook approximately 15 minutes until noodles are done.
  6. Garnish with chopped parsley.

Helpful hints

  • Make a batch and eat soup all week, or cut recipe in half to make a smaller batch.
  • Low-sodium broth contains 140 mg sodium or less per cup. Look for Campbell’s® low-sodium broth, Health Valley® low-sodium broth or Nature’s Choice® low-sodium broth. Avoid low-sodium broth with potassium chloride — it is very high in potassium.

I loved the soup but I would like to know how many cups is 6 ounces wide noodles, uncooked? Dietitian comment: Six ounces dry egg noodles is approximately 1-2/3 cups.

I haven't made this soup, however, I will. Before my diagnosis of stage 4 kidney failure I made my own chicken soup and I added some fresh parlsey, rosemary, thyme and dill, it adds a lovely flavor to the soup. May be just the thing to solve the supposed lack of flavor as suggested by some. It appears that there are new recipes available, so good to see that and any new updates on foods we can add to our meal plans. Thanks!

I am having trouble finding low sodium chicken or vegetable broth with phosphorus of potassium listed in the ingredients. I did find Pacific Foods organic free range low sodium chicken or vegetable broth and phosphorus or potassium are not listed in ingredients. Can you tell me if these are okay. Dietitian comment: Nutrient data from the USDA database for several broths have chicken broth potassium range 103 to 200 mg per cup and phosphorus 43 to 72 mg per cup. For vegetable broth potassium range is 130 mg and phosphorus 72 mg per cup. This data does not include specific brand names.

Doesn’t rotisserie chicken ( like from Costco) contain a lot of sodium? Dietitian comment: Yes. To minimize the sodium discard the skin. This recipe is higher in sodium than the other DaVita chicken noodle soup recipes because of the rotisserie chicken. All the other recipe ingredients are low in sodium, which helps keep one serving of the soup in the kidney-friendly range.

What about Herb Ox sodium free granulated chicken bouillon it has 0mg. sodium and 380 mg. of potassium. I cannot find the phos in the ingredient label. Is that okay to use even if I use a whole packet. I cannot find the phosphorus amount in food analyzer it just tells me no data. Please advise as I did buy some and have not used it yet. I may help to season some of my recipes. Dietitian comment: I do not have a specific amount of phosphorus for Herb-Ox product, but generally phosphorus is low, around 10 mg for a 1 cup serving. The potassium content of Herb-Ox bouillon is too high if you are on a low potassium diet. A better choice is packaged low sodium broth that does not contain potassium chloride or a homemade broth.

I'm only allowed 40 g of protein, this soup has 21 grams. I don't know how much meat one gets from a rotisserie chicken and wondered if I were to poach boneless skinless chicken breasts and use that for the chicken how many breasts would I need to equal the rotisserie chicken. I would then make sure that I am using less meat so that I can lower the protein number. Is this a good idea or would it be just as beneficial to make my serving smaller to lower the protein number. Thanks for your input. Dietitian comment: You can use a boiled chicken breast. To decrease the protein to 13 grams use 1-1/2 cups cooked chicken instead of the 4 cups Rotisserie chicken.

I tried making it your way but I like more seasonings. I put two cloves of garlic and some poultry seasoning. I think if I make it again I will add some lemon and more garlic. Like I said I like more seasoning.??

Boil the bones to make your own broth. Add thyme, spring onions ,turnip and a whole green hot pepper to improve the flavor. You could also add a little dab of salted butter

In regard to the complaints about lack of flavor: I make my chicken noodle soup much like this, but I start with the chicken and chopped onion in the broth. I add a generous shake of garlic powder (NOT garlic SALT), then let it simmer while I slice the celery and carrots. Sometimes, I let it simmer 20 minutes or so. Then I add the celery and carrots and let cook about 8 to 10 minutes, then add the noodles and let the whole thing cook till the noodles are done, about 9 minutes longer, or to your taste. I think the flavor is great, and the garlic is a game changer. The next day, the left-overs are even more flavorful.

I want to comment on the comments regarding the lack of flavor in this soup. I have not made this soup because I make my own chicken soup using a raw whole chicken, I add much of the same ingredients as this recipe, onions, celery, carrots etc., however I also add fresh rosemary, fresh thyme, fresh parlsey and fresh dill to the chicken as it is cooking. The amount of herbs is dictated by each cook but it adds so much wonderful flavor to the finished product.

How many servings to this recipe? Dietitian comment: The recipe makes 10 portions, 1-1/4 cup each. You could freeze leftovers in individual servings to reheat for a quick meal later.

Isnt this terribly high in potassium & phosphorus? Dietitian comment: Not for the amount of protein in one serving. If your daily goal is 2,000 to 3,000 mg potassium and 1,000 mg phosphorus this soup can easily be planned into a kidney diet meal.

AI remembered that DaVita had some chicken soup recipes...thank you. I get my PD catheter Friday 3/8/19. I need comfort food after the surgery I am sure of it. I can't believe I will be able to use Low Sodium Chicken broth. A few months ago, before I knew you were here, I made chicken noodle soup without buying broth, just used what the chicken, carrots and celery produced. I'm a good cook, most often a excellent cook, so they tell me. But, not this batch of soup I cooked up, I won't admit to it anyway! NO FLAVOR WHAT SO EVER. Ate it though. So, I am going to make up a batch of your recipe and hope for sure that I am allowed to not get into any trouble with what I would consider a lot of salt. I will let you know how I do, with both events. I'm so glad you are here for all of us, DaVita. I was doing great on the kidney diet, but Doc said my kidneys just got to sick for the diet to help. They said I was a good patient. My PD dialysis was deferred several times because of the diet. So there, we make a great team. Thanks you. 4stagesever. Now 5th state sever (GFR 11). Rotisserie chickens from stores are convenient but are extremely high in sodium! Better to make our own.

This is delicious! I do have one question though. I am a weight watcher and need to know the points of these recipes. I can figure out the points myself, but in this recipe and others, I need to know the amount of saturated fat and sugar which you don't list on the Nutrients per serving. Thank you.

This is terrific ... and fast! We left Costco at 4:00 with the rotisserie chicken and were eating dinner by 6:00. I did add 1/2 teaspoon of black pepper at the end, though. Thanks!

Liked the soup, next time I substituted frozen vegetables using a 16 oz bag, how does this change the totals? Dietitian comment: The potassium is higher due to increased volume of vegetables. You can use DaVita Diet Helper "My Creations" to recreate the recipe with your changes and see the new nutrient values.

Ingredients call for 8 cups low-sodium broth but in directions you state measure 4 cups for soup. What about the other 4 cups? Dietitian comment: The recipe is referring to measuring 4 cups of the chicken once removed from the bones. You use all 8 cups of broth in the soup.

Boil a chicken and strip the meat. Add the celery, carrots and onion to water and bring to boil.Use Rice noodles or No yolks Noodles. Boil 10 minutes then turn to simmer and add chicken meat. A little pinch of salt per bowl won't kill you! Forget using all canned anything, it all sucks!

I'm sorry, I want to like it but it's killing me to have to make this for my mom. I seriously don't know how she is going to eat it. It smells great but the lack of flavor is a total let down. The low sodium chicken broth tastes like dish water, even the chicken loses it flavor from being in this stock. So I guess I figured out how the hospital makes their soup.

I am at a lost on what to eat. My diet consist only 50g of protein and 1500mg of sodium a day. I would love to be able to eat without fear. I log my protein and sodium and have not cheated in two years. I think that the salt content is too high. I will not even use this recipe because of the salt content. I can control my protein easily however sodium is very difficult. I find this recipe has zero rating for me..

Is the rotisserie chicken from a deli. Would there be too much salt. Sounds really great..thanks.Dietitian comment: Yes, the values used to calculate nutrients included rotisserie chicken. At 361 mg sodium per serving this soup is still lower than reduced-sodium soups that are commercially prepared. You could substitute fresh cooked chicken for even lower sodium.

why not cook the soup with a raw chicken and avoid the prepared broth problems? Dietititian comment: Sure you can start with a fresh chicken instead of the prepared and will have plenty of low sodium broth to use.

This is a great recipe, some times I used the canned chicken, to make it faster and cheaper, it is quick and easy.

I would like to use the carcass from my home roasted chicken to make my broth. Will this add phosphorus to the broth? I don't salt my chicken. Dietitian comment: Yes there will be some phosphorus added as it leaches from the bones of the carcass. The phosphorus content is similar to the amount from canned broth[INVALID]-35-70 mg per cup.

Can you use the carcass from the rotisserie chicken to make the broth or would that have too much sodium when done? Before CKD I always made chicken soup using the carcass leftovers and I would add celery carrots and onions for flavor. Not sure if that is safe to do anymore. Thanks! Dietitian comment: I have occasionallyfound rotisserrie chicken without added seasoning, so the sodium is lower. Since there probably is some added salt or hig sodium seasonings I suggest count the broth as reduced sodium but not sodium free.

Like so many of the other comments, this soup went over very well with my husband. I'm keeping it on my list for future meals. Thanks so much for doing the research on what is necessary for a renal diet. It helps me feel more comfortable with what I'm preparing at mealtime.

My mom just started dialysis and has always been a salt lover. So I thought this may be a hard sell. Well, she loved it. I froze the rest in individual servings and froze them for days she is alone and can't cook. I will make this again.

I used Wylers instant SODIUM FREE broth mix instead. just as good and NO SODIUM! Moderator comment: A word of caution--Wylers sodium free broth, like many low sodium products, substitutes potassium chloride instead of sodium chloride. 1 teaspoon contains 500 mg potassium so this substitution is not recommended if you are on a low potassium kidney diet. Always read the ingredients to be sure.
