With today’s busy pace, eating on the run is all too familiar. But you can still manage to squeeze in a healthy lunch that’s in line with your kidney diet. Ingredients to keep on hand for a quick lunch include pre-cooked chicken or turkey, frozen shrimp, ground beef, pitas and flour tortillas, celery, onion, lettuce and mayonnaise. Look for pre-chopped onion and celery, or chop veggies ahead of time and store them in the refrigerator until needed. To complete your quick lunch, add fresh or canned fruit, low-sodium crackers and a sweet treat such as cookies. Try one or all of these lunch recipes for a quick kidney-friendly meal.

Do not care for mexican food. Also am on potassium diet that is low
So far all of the recipes that I have used seem to be flavorful and good eating. On Low potassium diet.
HI! i THINK, YOUR RECIPE, ARE GOOD
My husband is on a very low protein diet for his CKD...7g (1 oz protein) for breakfast, 1 oz. for lunch and 2 oz (14g) protein for supper. This protein must total, meat, fish, eggs, cheese and dairy. Grain proteins are not included in the above but he is allowed about 6-8 g of protein for this food group. Must watch potassium of course and follow with a list of low, med. & high potassium foods. I cannot make a chili which has beans and meat in it - too much protein. Also pasta is high in protein and I order from a hospital speciality shop, very low protein pasta - Aproten for his use. It is very expensive but as meat is minimal, it offsets the price. Any ideas for LOW protein lunches, suppers and appetizers? Moderator Note: Many of the recipes on this site can be reportioned to keep the amount of meat at 1 ounce per erving. The DaVita Diet Helper has a 50 gram protein that can be modified for a lower protein plan. Check the FAQs for tips on how to do this.
