i would like to know if taking brussel sprouts and broccholi and carrots and cauliflower and steaming them all combined adding steamed sweet pototoe and taking a serving of it with a teaspoon of butter is as healthy as well... i usually dont care much for veggies added in a casserole or in a dish with bread crumbs.. Is this good for me or NOT please advise. Dietitian comment: It depends on your diet. if you are on a low potassium diet you can have the vegetable combination in a 1/2 cup portion. The sweet potatoes are high in potassium but the amount in 1/2 cup with other veggies should be ok. If you are not on a low potassium diet a larger portion is acceptable and no worries about the potatoes.

I'm diabetic too, so I substituted 1 Tbls. of the half brown sugar, half Splenda mix in place of the sugar and apple juice and it was very tasty!
This is a good carrot recipe, very sweet though!
Have made this recipe many times. It's a favorite in our house. Usually use baby carrots. Just cook them a little longer.
