Green Bean Casserole

Could this be frozen? I am doing meals for a shut in who is stage 4 and trying to come up with meals that can be frozen. Dietitian comment: I am unsure but think so. Try freezing a single serving then thaw it or reheat in the microwave to test the freezing process.

Could you use frozen broccoli instead of the green beans? Dietitian comment: That sounds like a tasty variation. If you are using frozen broccoli florets the potassium will be similar and phosphorus slightly higher. Look for unsalted and do not add extra salt in cooking to keep sodium in the same range.
